I have Kentucky Wonder climbing beans. They are so good fried--wow! Actually, they are so good however you fix them. The problem I am having is that they grow so fast. I am going to have to start picking them twice a day in order to keep them from getting bigger than I prefer. It breaks my heart to have to discard those that get too big. The chickens are happy and the horses love them. And if it is Thursday, I can take them to the food bank. They are still better than anything you can buy at the store, but once you taste those young, tender beans, who wants to eat anything else? It sure isn't worth the time and effort to process them. I probably don't lose as many as it seems when you judge by numbers rather than the size of the pile. But, gee, I would rather have them in my freezer.
I am freezing the beans in vacuum bags along with strips from two sweet peppers all ready to stir fry. So I am getting the peppers put up at the same time. Tasty stuff!

That's a tough situation to be in! LOL My sister is having the same issue, she started freezing some as well. Any that get to big, her chickens get, or she gives them to me. I boil them in low sodium chicken broth and feed them to the dogs. They LOVE them.
