Plum BBQ Sauce
4 cups cut and pitted plums 3/4 cup sugar 1/4 cup balsamic vinegar 1 1/2 tsp ginger 1 1/2 tsp allspice 1/4 cup finely chopped onion 1/4 cup finely chopped green pepper 1 minced garlic clove 1/2 jalapeno pepper finely chopped 1 tsp salt
Simmer all ingredients for one hour. Pulse in blender. Heat back up and pour into sterilized jars and cover with sterilized lids. Makes 6 cups.
If you prepare the plums using a steamer, there is no reason you can't put everything through the blender first--before putting it all into a stock pot to simmer for an hour. And, chances are, you are going to want to make much more all at the same time. 6 cups is not much.
I plan to hot pack some--as above--and water-bath more to eat later in the year.
