I'm looking for recipes for hamentashen and also recipes for gluten free cookies.
I have tried a couple of hamentashen recipes and they came out horribly, so any ideas would be welcome. I'm usually pretty good at baking.
I also want gluten free cookie recipes but not the kind that are good "for a gluten free cookie". I am picky and want them to be REALLY GOOD (period)

Haystack cookies are inherently gluten free (might need special oatmeal for severe sensitivity) Also about the only cookies I'll make because they don't have to be baked and I get tired of the project after one pan when I have to bake cookies.
2 cups sugar, 1/2 cup milk, 1/2 cup butter. 3 or 4 Tablespoons cocoa powder. Boil for 3 minutes. Add 3 Tablespoons peanut butter and optionally 1 tsp vanilla.
Pour over 3 cups oatmeal. Stir to mix well and drop on waxed paper or saran wrap to set up. Can add coconut flakes, raisins or I like the craisins to the oatmeal.

Another cookie that only uses oatmeal no wheat flour is monster cookies. My cousin's DH makes these to take hunting. Major hiking is part of his hunting. Here is a recipe from a cookbook but this is one that I'm sure you can find on the recipe sites or can just adjust the add ins to suit your own tastes.
1/2 lb brown sugar (about 1 cup) 1 and 1/2 cups white sugar 12 oz peanut butter 1/4 tsp white syrup ? (might be a typo in this recipe) 1/4 tsp vanilla 2 tsp soda 3/4 cup coconut 1 stick butter (1/4 lb) 2 tsp salt 4 oz M&Ms 4 oz choc chips 6 cups oatmeal 1/2 cup nuts

That looks good!
You probably already know, but if you add a couple of big tablespoons of applesauce to just about any kind of cookie, it keeps it moist. I'm guessing grated apple would work just as well.
