Better not to ask the calorie counts on this one! 1 c unsalted butter 2 3/4 c flour 1/2 tsp baking soda 1/2 tsp salt 1 3/4 c sugar 6 large eggs 1 tbsp vanilla extract 1 c sour cream blended with 1/4 c of milk Heat oven to 350F. Butter and flour a bundt or tube pan. Whisk the flour, baking soda, and salt together. Beat the butter and sugar together until light and fluffy. Add each egg one at a time, blending well. Add the vanilla. Beat in half the flour mixture and the sour cream. Blend in the rest of the flour. Pour into the pan and bake for 1 hr or until toothpick comes out clean.

I made this cake yesterday but I'm renaming mine "Oh Sh*t" Cake. I was already in the middle of the instructions when I read "Sour Cream." I didn't have any sour cream so I substituted 1 cup cottage cheese and 1 tbsp vinegar (I didn't have lemon juice-I googled sour cream substitutes that called for Cot. Cheese and lemon juice). I didn't even mix them together like I was supposed to. Frazzled, I dumped them in individually It still turned out DELICIOUS! Little flecks here and there of cheese that I'd probably not have cared about if I didn't *know* what they were... I cut the cake warm and served canned peaches over top. Yumyumyumyum.

twoponys, Thanks!!!! Can't wait to try this one out--and no, I won't dare ask for the calorie count! LOL Reds...too funny. But hey, at least you knew what to do to fix it...I probably would've panicked and thrown it out! :OP
