Mice: 3 cups all purpose flour 1/4 teaspoon salt 1 cup butter, softened 3/4cup sugar 1 teaspoon vanilla or almond extract 1 lg egg ***** sliced almonds 10' licorice laces, cut into 3" lengths 6 oz melted chocolate chips *********** Whisk flour & salt together in small bowl. In lg bowl & elecrice mixer on med-high, beat butter until creamy, add sugar slowly, beat until light & fluffy, beat in extract then egg. Slowly add flour mixture and mix on low until just blended. Scrape dough into lg plastic wrap, cover completely, chill until firm, about 2 hours. *********** Roll pieces of dough unti about 1 1/4" ovals, slightly elongate one side to form nose. Pinch bridge of nose to form eye sockets. Place two sliced almonds behind eye sockets for ears. Do not press to far or head hill crack. Place mice 2" apart, bake at 350, about 15 minutes. Place pans on racks and immediately insert skewer about 1/2", remove and insert licorice. Place melted chocolate in sandwich bag, snip tiny opening at corner, pipe on chocolate eyes & nose. Cool until choclate firms.

Oh, and if you google christmas mouse recipe, you'll get a bunch of different ones. Some different stuff used for ears, ears, nose & tail, even some in chocolate!!
