Tried a new recipe out on friends and I think they liked it, 'cause they asked for the recipe. It will make a nice side at Thanksgiving.
Frosted Cranberry Squares
2 - 3 oz packages raspberry flavor gelatin 2 C boiling water 1 - 12 oz package cranberries 2 C sugar 2/3 C orange juice 1 - 20 oz can crushed pineapple 1 tsp grated orange peel
In large bowl dissolve gelatin in boiling water, set aside. In blender or food processor finely chop the cranberries. Combine cranberries, sugar, orange juice, pineapple, and grated orange peel and carefully add to gelatin. Pour into a 13 X 9 glass dish and cover and refrigerate until firm or overnight.
3 oz softened cream cheese 1 C whipping cream 1 C miniature marshmallows
In mixing bowl beat cream cheese until light and fluffy. Scrape cheese off beaters; add whipping cream. Beat at low speed until mixed. Increase speed to high. Continue beating, scraping bowl often, until stiff peaks form (1 to 2 minutes, do not over beat or it will separate!!). By hand, fold in marshmallows. Spread over firm cranberry gelatin. Refrigerate at least one hour. Cut into squares. Garnish will sugared cranberries and orange peel if desired.

I can vouch for this; it's absolutely delicious. Dpt should know that both Reds and I confessed to each other that we had some for breakfast the next day. I LOFFS being the guinea pig!

I just saw this - i got confused by the guinea pig part...lol
this looks like a fun twist on the cranberry side dish!

Does look yummeh. I was a confooozed one too... first I thought it was FOR guinea pigs to eat, then I think it was for people you know who raise guinea pigs.
