Snaffle asked me to post this recipe. It has gotten rave reviews in 4 countries and made me a very popular person. It has a nice chocolate flavor and a shiny, smooth but not too rich frosting. I hope you enjoy it.
Cake
2 oz unsweetened chocolate or 6 tbsp cocoa plus 2 tbsp butter
¼ lb butter
1 ½ c sugar
2 eggs
2 tsp vanilla
2 c cake flour or 2 c flour minus 3 tbsp flour plus 2 tbsp cornstarch
1 ½ tsp baking soda
½ tsp salt
1 c ice cold water
Preheat the oven to 350F. Butter and lightly flour 2 8 inch cake pans or a 13x9 inch pan. Melt the chocolate in a small pot or over simmering hot water; set aside to cool. Cream the butter and slowly add the sugar until light and fluffy. Add the eggs and the vanilla, mixing well. Add the chocolate and combine thoroughly. Sift the dry ingredients together, add to the first mixture, blending well. Add the water and beat until smooth. Pour into the prepared pans and bake for 25-30 min until a toothpick comes out clean. Cool in the pans 5 mins before turning out onto wire racks.
Creamy Chocolate Frosting
2 oz chocolate, grated or 6 tbsp cocoa and 2 tbsp of butter
1 c sugar
3 tbsp cornstarch
1 c boiling water
1 tbsp butter
1 tsp vanilla
1/8 tsp salt
Combine the chocolate or cocoa, sugar, and cornstarch in a heavy bottomed pan. Stir in the boiling water, and cook over moderate heat about 2-3 minutes stirring constantly, until thick and smooth. Remove from heat and add the butter, vanilla, and salt. Immerse the pan into cold water and beat until smooth, thick, and cool.
