One of those dishes that I just throw together, so I don't have specific amounts, but I'll try.
Cut out stem end of green peppers and take out seeds and membranes. Some recipes call for parboiling the peppers, but I don't, I just bake longer in slow oven or put them in a crock pot as I did today. Brown hamburger, chopped onion, and chopped pepper (I used green, yellow, and red because I had all three, but using just green is fine also). Drain off grease. Make some rice per directions (I used Minute rice, brown and white, again because I had both on hand). Most recipes call for just tomato sauce, but I use equal amounts of tomato sauce and Prego spaghetti sauce because I like the taste better. Combine the hamburger mixture, rice, and a small amount of sauce along with some shredded mozarella cheese and stuff the green peppers. Pour sauce over and around the peppers in a baking dish and top with more cheese. Bake at 350 for at least one hour, covered until peppers are tender. Or crock pot 4-5 hours.

I refuse to believe that Red's ate that. If I would have made a dish like that back in the day... she would have refused to even taste it.
