Zucchini Bread or Muffins
3 Eggs 1 cup Oil 2 cups Sugar 2 cups peeled and grated Zucchini (I leave some of the peels on) 3 cups Four 1 teaspoon Salt 1 teaspoon Baking Soda 1 1/2 teaspoons Cinnamon 1/4 teaspoon Baking Powder 3 teaspoons Vanilla 1 1/2 cups Chopped Nuts
Mix together and pour into 2 loaf pans or muffin tins. Bake at 325 degrees for 1 hour for loaves, or 15 minutes for muffins. Remove from pans in 10 minutes

Wow, three cups of flour? About how many muffins would you guess this recipe makes, Snaffle? Should I butter up both tins?

yeppers. 3 cups of flour. I am surprised you didnt question 3 cups of oil.. that is a lot of oil!
I havent made this since last summer... so I dont remember how many muffins.. I am sorry!

You two are funny When I made this, I doubled it. I used a duck egg that was a double yolker and 2 regular chicken eggs. You wouldn't believe how moist they were
