RHUBARB CRUNCH
Filling: 4 cups chopped Rhubarb 1 1/3 cups White Sugar 6 tablespoons flour or Minute Tapioca 1 tablespoon Melted Butter 2 or 3 tablespoons Raspberry Jello powder
Combine all of the above and spread in a 9 x 13 baking pan
Topping: 1 Cup packed Brown Sugar 1 Cup Quick Cooking Oats 1 ½ cups Flour 1 cup melted Butter
Mix the topping ingredients and sprinkle over the rhubarb mixture.
Bake in a preheated 375 degree oven For approximately 40 minutes

Yum. I love rhubarb. My only regret with strawberry/rhubarb pie is that they put the strawberries in it (I like fresh ones, hate them cooked). I must try this!

Me too!! Me too!!! I love fresh strawberries.. hate them any other way... can't imagine them baked in a pie The little bit of powdered jello helps to add a bit of color, and a teeny bit of flavor (maybe )
