After trying this recipe many years ago, we have never ever tried another recipe for pumpkin bars. This IS the best!
PUMPKIN BARS
2 cups sugar 4 eggs 1 cup oil 2 cups flour 2 cups pumpkin (#1 can = 15 oz) 2 teaspoon baking soda 1/2 teaspoon salt 2 teaspoon cinnamon
Mix sugar and eggs, pour in oil and set at medium speed until oil is blended. Add flour, soda and spices. Add pumpkin and mix until well blended.
Pour into a greased cookie sheet.
Bake 325 - 350 degrees for 20 minutes.
ICING (We like to double this recipe)
4 oz cream cheese 1 teaspoon vanilla 6 tablespoons butter 2 cups powdered sugar 1 teaspoon milk
Soften cream cheese and whip with butter, add other ingredients and frost the cake.

I have this very same recipe. I add a little nutmeg to it (because I'm wild about nutmeg). These are truly the best.

bumping this one up. I have used this recipe since the 1980's. It is truly the best!
We don't ever attempt to make another pumpkin bar recipe.

Funny! I love this recipe. I don't remember posting that I'm wild about nutmeg. I must have been on a nutmeg craze or something when i wrote that.

That's funny newfy!! 2 years ago you wrote that. Sometimes I will look through the old posts and find something I wrote.. and do not remember doing it at all. Soooo you add nutmeg right? Reds is mixing this up for our Thanksgiving dinner... I wonder if she will add a bit of nutmeg

I've never met a pumpkin bar I didn't like! We include something very similar with our cookies, but we swirl the cream cheese inside. Yours sounds much awesome!

How firm do they turn out - like a brownie or do you need to eat with a fork? Sound delicious, but how pretty are they?

They are firm enough that you can pick one up and eat it. Use a fork if you feel that is better They practically melt in your mouth. We have been making these pumpkin bars since the 80's and always doubled the frosting recipe until this year. For some reason, we now like them better with just the regular amount. Go figure Pretty? How pretty are they? They are BEAUTIFUL!!
