3/4 cup coarsely chopped walnuts 3 cups bow tie pasta (I've used Penne & other types too) 2 cups shredded cooked chicken 1 cup smoked cheese, such as Gouda (I've used harvarti & provolone too) cut into 1/4" cubes 1 cup celrey thinnly cut 1/3 cup finely chopped red onion (I don't do onion, so I skip them) 3 tablespoon fresh chopped chives (I only use 1 tablespoon) 2 tablespoons chopped fresh parsley
Dressing: 1/3 cup fresh Orange juice 1/4 cup fresh lemon juice 4 tablespoons extra virgin olive oil 1 tablespoon stone-ground mustard 2 teaspoons sugar 1 1/4 teaspoon salt 1/2 teaspoon fresh ground black pepper 2 teaspoons rice wine vinegar
Preheat oven to 350*, place walnuts on a cookie sheet and back for 8 - 10 minutes, check frequently, let cool Cook pasta according to package directions, drain, let cool. To prepare dressing, combine all ingredients in a large bowl and whisk together to blend. Add pasta, chicken, cheese, celery, onion, walnuts, chives & parsley and toss gently to combine.
