Too many cucumbers? I'm trying this, it looks really good. What I have learned so far is that the slicing blade on my food processor is very, very sharp. Take my word for that--there is no reason for more than one of us to be wearing a bandaid.
"The Garden Fresh Vegetable Cookbook" by Andrea Chesman
4 cups very thinly sliced cucumbers 1 onion, very thinly sliced 2 tsp salt 1 1/4 cups white vinegar 1/2 cup sugar 1/2 tsp ground turmeric 1/4 tsp celery seeds 1/4 tsp freshly ground black pepper 1/8 tsp dry mustard
Combine the cucumbers, onion and salt in a colander. Let stand for at least 2 hours.
Meanwhile, combine the vinegar and sugar in a small saucepan over low heat and stir until the sugar is dissolved. Stir in the tumeric, celery seeds, black pepper, and mustard. Let cool to room temperature.
Pack the cucumbers into freezer containers, leaving at least 1 inch headspace. Pour in the brine. The brine will not cover the cucumbers. Mix well. Then freeze. (I am going to put this in many small, flat freezer containers.)
Defrost in the refrigerator for at least 8 hours before serving.

ROFLOL!!! Me too! ;D Have you ever had frozen pickles before? I'd worry about the texture being mushy. I wonder if this would work with summer squash? I've pickled them like bread and butt pickles before.

I have a recipe for freezer pickles. We love them. They always turn out great.. well... almost always. most of the time they never make it to the freezer.

It says (for what it is worth) "Freezer pickles taste fresher than canned pickles. In this recipe, the flavorings are the same as a traditional bread-and-butter pickle, but the flavor is fresh and bright--more like a marinated cucumber than a true pickle...." "These pickles make a terrific addition to cheese sandwiches."
They are tasty (I've been testing before they go in the freezer.) Because I cut them with the food processor, they are very thin--so there isn't any "crunch" like you ordinarily think of with a pickle.
I am suprised the board posted "butt" pickles--it must be slipping.

For those of you that like bread and butt pickles, try them on a PB sandwich. One of my favorites, though my DH looks at me like I'm a loon when I eat them.
I bet the brighter fresher taste of these pickles would be really good on PB... yum.

I saw amber posting here so the last thing I figured was any kind of pickle!
My mom made B&B pickles and we had them on PB sandwiches... All we could think of was that was a sandwich Elvis would like!
Actually, I have a couple of loaves of boring Freezer Bread (frozen dough that you thaw and bake.) I was hoping there was something tastier and more fun to do with those (they are all fluff.)

mmm, no... we've eaten those in my family since I was a kid. The bread and butter pickles are sweet, so they go just as well as PB&J. Don't knock it if ya haven't tried it!
