How do you fix your fresh cucumbers? My mom always slices them and soaks them in ice cold salt water, then drains and rinses. Adds fresh sliced onions and vinegar and sugar. Any other good ideas for me?

I like them sliced & dipped in salad dressing, or put in a salad.
My mom would slice cucumbers, tomato & onion, and put them in a shallow bowl with oil, vinegar and season salt.

I like them sliced with thick yogurt, dill and lemon juice. It's a greek recipe but you can pretty much work to taste.
I also like them with sliced onions and chopped green olives with vinegar and oil. This goes with steaks or burgers really well.
I have problems with burping from fresh cukes, but I discovered that if I peel them and cut out the seeds, I get all the flavor without the tummy discomfort.

My dad always grew burpless cucumbers, taste the same, but no burping. :-)

I always keep a bowl of these in the refrigerator while the cucumbers are ripe.
CUCUMBER SLICES (FRESH OR FROZEN)
2 cups sugar 1 cup vinegar 1 tablespoon salt 1 teaspoon celery seed
cut up 7 cups of cucumbers, thin 2 or 3 small onions green pepper (optional)
add vegetables to sugar mixture and refrigerate for 24 hours before freezing.
Serve fresh or freeze

lol, ya'll are too funny.
I like...
cucumbers, sliced. onions, sliced. miracle whip salad dressing--a couple of spoonfuls, I eyeball it. A splash of vinegar salt & pepper
(I put tomatoes sometimes also).
sidenote: Easy, different salad with no lettuce. I don't like it as well with regular mayo such as Dukes.

Cukes peeled, seeded, and cut into chunks, then dressed with thick yogurt, cumin, garlic. Onions in slivers thrown in. YUM.

Okay - my favorite is a cucumber sandwich. Good fresh whole grain bread, sliced thin, a little mayo, lots of cucumber slices, salt and pepper - mmmm mmmm good!

No, no, Karen..... Alfalfa sprouts and cream cheese on that sandwich with the cucumber! You can put a fresh tomato on it too.
