THE LUPUS LADY'S USUAL ARBY’S CHICKEN SALAD SANDWICH MIX
2 cups chopped apples 2 cups cut red globe grapes 2 cups chicken cubes or shreds 1 cup finely chopped walnuts 1 cup (about) mayonnaise 1/2 cup (about) sour cream 1/2 cup finely chopped onion salt freshly ground black pepper 1 tablespoon (or more) fajita seasoning mix
Mix all together and serve in individual sized cream puff shells, or on a whole grain bread, pita, or tortilla.
I served this on whole wheat sandwich rolls and they were wonderful!

I could eat this as a side salad rather than a sandwich...it was yummy

This was to die for. Fresh and summery, light yet filling. And so flavorful! We'll be having this again!

Hmm, I think this could be doable. I'd have to tweak it is a bit, I don't eat onions. But other than that... I'm sure DH would like it.

I'd have to leave out the walnuts, and the onion since I only eat onion cooked, but this sounds good. Now if only I can find grapes grown ANYWHERE but Chile!

I never used to eat onions either. In fact, if a recipe called for onions.. I knew they were needed for a certain flavor. so I would toss the liquids in the blender AND the onions and whip them into oblivion sometimes now, I will still blend the onions.. for this recipe I bought those little skinny green onions. I made super duper skinny slices.. couldnt even see them in the mixure ;D Another trick for people who hate onions.. is to buy onion flakes or diced onions.. the dry form is easier to tolerate

I like green onions. It's just regular onions I can't do raw. I have dry onions too. It's about the only way I can have onions in my food, cause Hubby hates them. I like them in twice baked potatoes, so I make his first, and then add the rehydrated onions to what's left to make mine!

This sounds WONDERFUL!!!! I will be trying very soon, I think...
Here's another REALLY yummy summer 'side' (or sammich) salad I love:
(sorry, no amounts, do to taste, I use more fruits/veggies than mean... but that's just me...)
cubed chicken (the grocery store rotisserie style is the best for this) chopped celery cut in half green grapes cashews Mayo

I have revised this recipe...
I now add 1/2 cup of dried cranberries and 1/2 cup of white raisins.
I dont use the oven during the summer, don't want to heat up the kitchen, so I buy those whole wheat dinner rolls in the Walmart deli. They are yummay!
