I have recently been experimenting with making omelets lighter in fat and higher in protein.
I mix up my eggs, but not as many as I usually would. Then I add about 2 big T. of lowfat/fat free cottage cheese and blend a little.
It makes the omelet lighter and more moist and ya can't tell it's cottage cheese in there. I hate cottage cheese (lowfat) but like high fat - but won't buy it.
