Any suggestions on fixing morels? Dusting in flour and pan frying in butter is the only way I know of.

Roll them in Bisquick instead of flour before you cook them in the butter. My stepdad loves them in his scrambled eggs. You can also soak them in salt water (to kill any bugs), then roll them in Bisquick, and then put them single layer on a cookie sheet to freeze. When they are frozen, dump them into a freezer bag. They will last about a year or so in the freezer and still taste as good as when you picked them.

Stella, those recipes look very good! Hopefully this rain we are having will bring out more morels. There are just a few out there in my favorite "walk to" places. I won't pick them unless there are more.

Oh man, we've got so many that I put a bunch in the freezer last night. I dip them in egg/milk, then in flour and deep fat fry them. Yum.

They were good. I just dipped in egg and then flour and fried in butter. I'll have to try your other suggestions next time. This was my first time ever finding any morels and they were right in my backyard! Of course, my husband who despises mushrooms, wouldn't try them. He said he is waiting to see if he needs to take me to the hospital.

Personally, I'd skip the flour/bisquick/egg, and saute them in a little butter/margarine and fresh crushed garlic... YUM (and saves a little on the calories from frying!).

I found the Mother Lode! We are stocked up now But, best of all, I found a delicious way to cook them. Dip in egg. Roll in Bisquick. Fry in butter. Season with salt and pepper. All that sounds familiar, doesn't it? But, add pinenuts to the butter just before adding the mushrooms. The pinenuts add to that "wild" taste and are just the perfect complement. Just fry the pinenuts along with the mushrooms and serve them all together.

I hear we have morels around here. Along with a look-alike that is poison. One has a hollow stem, one has a solid stem, so that is how you tell them apart. Can you tell I've forgotten which is which already? And I just heard that last week. I can be dangerous, I tell ya!

Morels have hollow stems. We've never found any lookalikes though.
