I need a recipe to make a potato dish for Easter that will be different from my traditional mashed potatoes.
Stella has one that she likes, I would like to see that recipe... and any others that some of you recommend.

Why not do twice baked? You can assemble them in advance and then throw them from fridge to oven to reheat. Mmmm, full of sour cream and cheddar, bits of crispy bacon and onion, mmmmm....

thanks for the ideas everybody... and thank you for posting the recipe Stella.. I am leaning towards the Pioneer woman's mashed potatoes WITH the peelings on!! I will letcha know how everybody likes them at our Easter dinner!

Wow that recipe looks good! I make something similar...I use butter, cream cheese and sour cream. I back it in a 9x13 pan and sprinkle paprika on top. Voila! Party potatoes!

The Pioneer Woman's recipe is the one I use. Erich RAVES about them, and requests them all the time. In fact, I get more compliments on this recipe than on just about anything else I cook.
