This is an excellent treat for lemon lovers. A rich, buttery, melt in your mouth crust topped off by a sweet, tart, lemony layer. Who can you ask for more? It's a perfect recipe to take to bridal showers, baby showers, or any other elegant occasion. Lemon Squares Crust 1 c flour 1/2 c butter or margarine 1/4 powdered sugar Topping 1 c sugar 2 eggs 2 tsp of grated lemon peel 2 tbsp of lemon juice 1/2 tsp of baking powder 1/4 tsp of salt powdered sugar Preheat oven to 350F. Make the crust by combining the flour, sugar, and butter. Using a pastry cutter or forks, cut the butter into the dry ingredients until it resembles cornmeal. Press evenly into a 8x8x2 inch pan. Bake for 20 min. For the topping, mix the sugar, lemon juice, lemon peel, baking powder, salt, and eggs together. Beat until fluffy. Pour over the baked layer and continue to bake until no indentation remains in the center when touched. About 25 minutes. Cool; sprinkle with powdered sugar, cut into one inch squares. Makes 24. *This comes to be 3 points per square.* I took these to the elderly gentleman I take care of. He has a fondness for lemon desserts. He and his brother couldn't keep their hands off them! His daughter said they fought over the last one!

mmm...I love lemon bars. Got lazy and started making the ones in the box, but this recipe looks easy enough to make. Thanks for posting.

I'm happy to have a *real* recipe too. But I have to say, the Krusteez brand in the box is excellent. Yip, I agree. That's the brand I use, also. They also make great lime bars, too. twoponys, the recipe was great. Snaffle, Stella, and I all enjoyed them. Sorry, stella, none left...my DH finished them off!

My only question is how do you get 24 pieces out of an 8X8 pan? pretty small pieces...hehe

I made it in the 8x8x2 pan and got 24 squares. LOL I always double the recipe to allow for a more generous servings. I am sure the box varieties have their merits. I have been making everything fro scratch lately.

I was wondering about the 24 pieces too. Generally when I cut an 8x8 pan, I get sixteen. I go four by four by four, you know what I mean? So do you go four by six? At that size, I'd have to have two.

I made these yesterday and we had them last night. mmm even hubby liked them and he is usually suspicious of anything with that much sugar! And, um, yeah, I had to cut in 16 squares.
I also like to make stuff when I can... I prefer real sugar to the fake sugar - my body at least recognizes it and I get satisfied. I am also trying to watch what kind of fats I eat. Here are the ingredients in the Krusteaz mix:

So.... You mean that when you make it in the 13x9x2 you get 24? Just trying to make the points come out right. I don't want to have any heart attacks post consumption.

I double the recipe and cut it into 32 squares. Which comes out to be 3 points.
