I spent the last weekend farmsitting for my parents, and one of my jobs was picking the squash that seems to be taking over their entire farm, let alone the garden patch. So I got creative on what to do with it! My favorite recipe I call Texas Goulash; it's super simple, very tasty, and very easy. 3 or 4 medium sized squash, cut very thin into circles or halves 1 pound ground beef, seasoned and cooked 2-3 cups corn, frozen or canned Garlic/onion powder Italian seasoning Paul Prudhomme's Meat Magic Beef boullion Saute the squash slices in a tablespoon of butter until transparent. Season liberally with the spices above (except for the beef boullion - shoot, I think I'm spelling that wrong). Add the corn and ground beef, stir continuously until the squash is going limp. Add 1-2 cups of beef broth made from the bouillon granules and some hot water. Cook until liquid is reduced by half and squash is cooked through. It will absorb the remainder of the liquid as it sits. You could also add rice, tomatos, or anything else that floats your boat. I got rave reviews from even my husband, who loathes squash, so if he likes it, you might just have a chance at getting your loved ones to eat it. ;D
