Made salisbury steak and mashed potatos. Yum! Made with very lean ground beef and low fat gravy, it was very reasonable points.

Oooh, we had this chicken like my mom used to make. A big bag of frozen mixed veggies goes into the bottom of a shallow roaster that's been sprayed with olive oil. Then a cut up chicken is laid all over the top, skin side up. Then all the meat is drizzled with low sodium soy and worchestershire, sprinkled liberally with garlic, thyme and marjoram, and then covered tightly with foil. It goes in the oven at 325 for about three hours, and out comes the most gorgeous, falling-off-the-bone moist chicken with yummeh crisp skin, and the veggies kind of carmelize. OMG it's so good!!! I don't know how many points but I had a thigh and about a half cup of the veggies. That was dinner. I had lots of calories leftover from the day so I tried to eat some Ben and Jerry's, but it was kinda gross. The first bite was great, but after that it was rather cloying. I put it back in the freezer. We'd had lunch out too, but I still stayed under my calories for the day. Just by a hair, but I did it. I was prepared to have it go over a little, but when I sat down and put all my stuff in FitDay, it was under my daily allotment. Go freaking figure. *shrug*

Our sunday dinner was a birthday celebration for Cherokee. Roast beef.. mashed potatos.. gravy.. corn...broccoli... fresh green beans ;D..Rhodes frozen dinner rolls...(from now on I will make my own homemade).. we HAD to have a dessert... homemade red raspberry pie!!! AND ice cream... there were no mashed potatos left over.. no gravy left over... and NO red raspberry pie leftover!!! I made sure of that! I cut the raspberry pie with BIG pieces so all 5 of us had only ONE piece with no leftover pie ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D back to eating healthy today

I was not feeling great so I had a tossed salad and some soup....Pasta Fagoioli and only ate the soup and onions 'cept for a couple of bites of pasta and beans. It settled my tummy and I slept well after. ;D

We had baked lamb sirloin steaks marinated in a spicy herb mix and hubby made the usual staple of rice, with dillweed and lima beans this time. I had a couple of the little steak pieces and about a half cup of rice. Hubby always cooks on Sundays so I eat what I want of it w/o comment because I am not doing the cooking.
