MJ asked about the sodium content of the casserole I made. egads, it has nearly 1000 mg - what is that 40% of the daily allowance? Even in recipes, I use less then called for. Apparently I am still getting a lot of salt! I think I heard on the "You" TV show that most Americans get TWICE their recommended amounts of sodium. Does anybody besides MJ watch this? Salt seems very pervasuive in our foods.

Sheryl, thanks for the recipe. I'm with you, I always thought I was watching our sodium because I used less and never had it on the table, but I definitely found out I was wrong. One thing I found out as we watch our sodium intake is:
I always bought the frozen bags of chicken breast. They say "enhanced with up to 15% chicken broth" and are 150mg of sodium for a 4oz piece. I wasn't counting chicken as sodium. Sodium is hidden everywhere, we can't use the supposed healthy TV dinners because the sodium is so high.

One thing I discovered shopping at walmart - most of their pre-packaged meats are "enhanced". That means they want me to pay $2.75/pound of water! I go to a local market that sells local (or fairly local) meat/chicken and it's all meat, no saltwater added.

I have finally started using SEA salt... much better because it has the minerals in it.

I use sea salt too, and I think you use less because it is more flavorful. It still has sodium though.
