You will need (recipe for 2ish): 2 chicken boobies, garlic, ginger, green onions, tamarind (NOT sweetened), broccoli, fish sauce (optional) soy sauce, cashews, olive oil, cumin.
In a wok, heat olive oil. Add about 2 tb. chopped garlic and the same amount chopped ginger (the pre-prepared stuff is fine). Cut up about 1/2 loose cup of green onion tops, saute all together. When it looks nice and partially done, add your cut up chicken, sprinkle cumin over the top (just 'til you have a thin layer). Cook 'til chicken is done through, add about 1 heaper of a tsp. of tamarind concentrate (adjust for non-concentrate as necessary), melt in wok, add fish sauce if you like, and soy sauce (these are really both just thin salty sauces, so all soy would work fine). Add about 1/4 cup water and let cook down a little. At the end of cooking add broccoli (unless you like your veggies limp, then add sooner) and cashews. Serve over rice. Really yummy, enjoy.
ETA: Whoops, amount of soy sauce and fish sauce are just a couple of shakes or squirts each, not very much. So if you use all soy, I'd do just a little more, but still not very much. Maybe a tablespoon at most. Also, I LOVE the sour tamarind, more than my DH, so I cook like above, but prepare a little of the concentrate with warm water to pour over my dish to make the tamarind stronger in mine.

Thanks t-leigh. That does sound just as good as I thought it would. I will try it as soon as I get to the Indian store for the tamarind.

That is one thing I miss so much living in this area, we just don't have access to a lot of 'fun' foods. In CA we had ethnic stores out the wazoo, and I know Georgia has several good Indian food resources, and evidently where you live as well. I ended up ordering from India because I just couldn't find the stuff I use online in the US, though I'm sure it must be available. Be sure and let me know how you like it!

Oh, and if you haven't used basmati rice (something tells me you have though) this is a good recipe to start with!
