It's a yummy low fat, low carb recipe that's easy and delicious! Perdernales River Chili (LBJ’s chili) President Lyndon Johnson loved to eat chili, but after a heart attack he was put on a fat free diet. If you use venison instead of beef, the chili is virtually fat free. It has only 6 grams carbs, 20 grams fat (with extra lean ground beef) , and 48 grams of protein. If you add a can of chili beans to it, my DH will like 4 lbs cubed or ground venison or beef 2 tbsp chili power (or package of chili seasoning) 1 large onion, chopped 1 10 oz cans Rotel tomatoes 2 cloves garlic, minced (original with green chilis) 1 tsp ground oregano 2 cups hot water 1 tsp cumin seeds hot pepper sauce to taste Sear meat, onions and garlic in large, heavy boiler or skillet until lightly browned. Add seasonings. tomatoes. and hot water. Bring to a boil. Lower heat; simmer about 1 hour. As chili cooks, skim off fat. Serves 8. Enjoy!

Thanks for this recipe. I made a crock pot chili last week and it didn't turn out too great. I'll have to try this one!
I lived about 40 minutes from the Pedernales River when I lived in Texas. It was a great place to go camping, hike, and swim!

Is it in the hill country? I love those fast-running, cold, clear rivers in Texas. Austin has some with great swimming holes.
About this recipe. If you use the grocery store chili pack of seasoning, you don't have to use the separate spices listed- like oregano. It's all good.
