> 1 lb skinless chicken breasts > 1 med onion 1 tsp or clove of garlic 1 tbsp of oil 2 cans of navy or white beans 1 can chicken broth 1 can mild green chilis 1 tsp salt 1 tsp oregano 1/2 tsp curry powder 1/2 tsp chili powder 8 oz sour cream
Saute the chicken, onion, garlic and oil until the chicken is cooked through. Add the remaining ingredients except the sour cream, bring to a boil and simmer for 30 min. Remove from heat and add the sour cream.
It can be frozen too.

Mmmmm, I love white chili! In the winter, I'm all about the soups. And if you use a low fat sour cream or use it as a topping (and limit your portion), this becomes a very nice diet dish, too! This looks like a really good one, and plenty easy. Thanks, twoponys!

Gets two thumbs up from our family! I did add bell peppers (sauteed) since I didn't have any onion. I used fat free sour cream, and it was still quite tasty. I served it with a boring plain cheese quesedilla (corn tortillas) since that is what I had on hand. yummy!
ETA: Made with fat free sour cream, it is 7 points if that made 4 servings. My kid ate about 1/2 the batch and DH and I split the rest.... we really did all like it! It is also quite mild which DH especially appreciated.
