Very low calorie and heart healthy. Even people who are so-so on fish love this one:
Mediterranean Fish
note: I used Greek olives for the extra flavor. I used basil and oregano as the Italian seasing. I also added a bit of diced bell pepper and cooked it with the onion. I actually used olive oil spray insted of the olive oil. I used mango peach salsa which made it a little sweeter, but any mild to med salsa would work. We really liked this one!
10 oz canned diced tomatoes 2 clove garlic clove(s) 20 large olive(s) 1 medium onion(s) 1/2 cup salsa 2 tsp Italian seasoning 1 pound raw tilapia 1 tsp olive oil
Sautee diced tomatoes (undrained) in 1 tsp oil. Add crushed garlic,Italian seasoning, onions and olives. Bring to boil. Place fillets on top and simmer until fish flakes easily. Top with salsa.

I wonder how it would work with sole or cod. I really don't like the texture of tilapia.

I know what's for dinner tonight - my boys love tilapia and so do DH and I - this sounds great. Bet it would go good over a bed of rice, too.

Chris, I think it would work with any mild white fish. I admit, I used prefrozen tilipia fillets from Costco, and they were only partially thawed when I cooked them... this is not a fussy recipe!
MA, fresh, heirloom tomotoes would be devine.
Karen, let me know how the family likes it. I have shared this with a couple of people and it gets rave reviews. We liked it well enough it has moved to the catagory of "will serve to guests".
