For at least two weeks this summer.. cherokee and I would have vegetable lunches!!! We would slice up zuchini and sautee it in olive oil... boil up corn on the cob..slice fresh cucumbers and have fresh grean beans.. it was wonderful!!! Great for weight reduction too!

That's one of my favorite kinds of meals! I do have to have a protein source though; I'm hypoglycemic.
