Okay, I suppose everybody knows how to make good BBQ, but I cooked some last night that everybody loved.
We bought some chicken legs/thighs and used some skinless frozen breasts (I don't like dark meat). Sprinkled some Stubb's bbq rub all over them and just let them sit for 20-30 minutes. Got the BBQ good and hot and then when we put the chicken on, turned it way down to low. Turned the chicken a few times and then during the last 5 minutes basted on a very small quantity of good quality bbq sauce. The skin on the legs turned out PERFECT. It was very tasty and moist. The breasts were slightly different since they were skinless and I also put a bit of olive oil and crushed garlic - but they all tasted wonderful.
Served it with cornbread, pork and beans and a green salad - family loved it.
