Looking for a recipe for pickled carrots that keeps the carrots CRUNCHY... i'm sick of eating pickled carrots that are smooshy I have nothing against lots of garlic! Pregnancy has magnified my pickling obsession, I love pickled ANYTHING, but pickled carrots, onions, pickles, and garlic from the local Farmers Market just aren't doing it for me anymore Thanks! -Britt

I have never in my life heard of a pickled carrot. How funny. They have jars of pickled eggs up here at the bars etc. Never had one, but it sounds gross.

Are you serious, NewfyGirl??? You're missing out! Its an acquired taste, but I love it! My mom used to make us pickled carrots when I was a little girl, they were the best i've ever had.. very strong tasting, crunchy, and perfect lol.

I am serious! Never heard of them! But...maybe I'll have to keep an eye out for them now... I do love cucumber slices with onion in vinegar and a little sugar. yum!

We always pickled jalapenos and put carrots in with them. I have no clue how my mom did it, though. The carrots were always spicy, delicious and crunchy. Mmmm.
