~snort!~ I don't have the recipe in front of me! Let me see if I can do this from memory. 3/4 c. butter 1 pkg. cream cheese (I've used the lite and noticed no difference in taste or texture) 4 eggs Beat well until fluffy 1 1/2 c. sugar 1 t. vanilla 1/2 t. lemon juice 1 t. baking powder 2 c. flour Mix ingredients well, scraping the bowl to make sure the cream cheese doesn't cling to the sides too much. Bake 1 hour at 350 degrees in mini or regular size loaf pans. I've substituted brown sugar for the white and added pecans and it was VERY yummy.

I knew that would get her attention! Oh, it is wonderful..the cream cheese makes it so rich...Of course, I have to use real butter and full fat cream cheese...hey, if you're gonna make cake, make CAKE, right?

Today I made it with whole wheat flour, pecans that I'd toasted first in butter in a skillet, and I used only 1c brown sugar. It was gorgeous! Very fine crumb, sandy crust, and yummeh. Thanks, Mouse!
