I can make the big fluffy dumplings easy enough, but I'm looking for smaller dumplings to use in the place of noodles in soup. something like spaetzle..which I just can't make quite right.. I get close, but not there...
Help!

Chris - I cheat on the little noodle type dumplings - Ted hates the big fluffy ones (which I love) But I learned to take two eggs and enough flour to make a semi stiff dough, then just pinch off pieces about half the size you want the finished noodle/dumpling and toss them in the pot about 15 minutes before you're ready to serve.
