My mother is doing Thanksgiving this year. First time in years, I haven't prepared the whole thing. I won't know what to do with myself, LOL.
I've been asked to bring "something green" i.e., a vegetable dish.
I'm thinking something with green beans or broccoli. something that looks festive, but is not too heavy or creamy. We'll have enough "heavy" foods. And not the ubiquitous green bean and mushroom soup and canned onions casserole, ick.
any good recipes, you guys???

Here's a really easto brocolli thing that I do and people love it, you can't make enough.
Cut the broc into small bite sized piece and par boil until amlost done. Heat some olive oil in a sautee pan and add broc and ample chopped garlic. Sautee and toss untill done and serve.
I know it sounds like of weird but people go absolutely NUTS over it at my house!

Oh and here's another one I love to make.
Either par boil asparagus spears to put in microwave until nearly done. place spears in one layer in baking dish (cake pan) sprinkle liption onion soup mix, small dobs of butter (or sprinkles of olive oil if watching your weight) and grated white cheese of your choice over the top. bake until the cheese is melted.
YUMMY!

eeuuuuuuu... sorry, Mule Girl, but asparagus is one of the very few foods in this world that I abhor! I'm sure my family would loff asparagus, but I want to eat too!

My green beans that I make in the crock pot are always a hit.
I take a pound of low sodium Hormel Black label bacon. Dice it up and fry it. Remove the bacon from the grease and drain on paper towels. Discard the grease or save for making gravy.
Dice up a Vidalia or Texas sweet (flat) onion.
Dump 3-4 cans of green beans (depending on how much yours will hold) into a crock pot. Mix in bacon and onion. I turn it up on high for an hour then reduce the heat to low. Cook overnight. My F-I-L literally BEGS me to cook these every time we get together.

I was going to suggest asparagus and hollendaise sauce..but....ok no asparagus... I WILL be using the asparagus recipe from Mulegirl for Christmas!

Tricia, we'll be having those green beans on our Thanksgiving table, too! I remember those well from when I was a little girl; my mom made them a lot. They're delicious!

Well, my mom being who she is, forgot she assigned me "veggies," and went and bought green beans for Thursday. She makes them well, but slathers way too much butter on them and I always have an upset stomach if I eat to much.
I'll be taking a veggie tray with dip for snacking on before dinner, and maybe the pumpkin dip with gingersnaps and apple slices for a pre dinner munchie.
I'm also thinking of taking a broccoli salad. I've had this salad at pot lucks and it's really good:
4 cups fresh broccoli florets 1/4 cup red onion diced fine 3 tablespoons raisins 2 tablespoons dry roasted sunflower seeds 1/4 cup plain yogurt 2 tablespoons orange juice 1 tablespoon mayonaise
1. combine brococli, onion, raisins, and sunflower seeds in a bowl 2. In a small bowl, whisk yogurt, orange juice and mayonaise until blended. Pour over the broccoli mixture and toss to coat.

Chris, that sounds yummy! I've been having a real thing for citrus fruits these days, and that sounds like it'd be seconds and thirds on my plate.
