I am hosting a small get together this weekend of horse friends and will be serving dinner Sat night and breakfast Sunday morning. We have pretty much decided on the Sat night menu, but need suggestions for Sunday morning.
DH would be happy with our regular Sunday morning breakfast of Bacon, Biscuits and Gravy. I was thinking of something along the lines of an egg casserole type of thing that I could put together Sat night after dinner and throw into the oven at dawn on Sunday.
muffins would be good too, ideas?
Anyone have any sure fire favorites?

Here's something really easy!!! Gives you more time to hang out rather than slave over a stove!! All you have to do is take the leftovers of whatever meat you made the night before (almost any meat will work) then, fry up some peppers and onions and scrambled eggs and throw it all in a tortilla!!! Add a little cheese and YUMMMMM and wicked easy!! We do this all the time and it's always good! Serve it with some cinnamon rolls or something so you have your sweet and it's perfect!

Well - not sure if this is really breakfast food - but I think it could be for any meal!
1 pound bulk sausage 1 onion 3 pounds potatoes 1/4 cup butter, melted 8 ounces shredded cheddar cheese
Cook sausage and onion until sausage is no longer pink (don't like onions - just use some onion powder).
Peel and slice potatoes into 1/4 to 1/2 inch slices, bring to boil and simmer 10 minutes or until soft.
Drain potatoes, put in 9 x 13 baking pan. Drizzle melted butter over potatoes. Mix in sausage. Top with cheddar cheese. Bake at 350 degrees 8 - 10 minutes or until cheese is melted.
You could make this the night before, refrigerate it, then just add the cheese and bake the next day.
Kind of a twist on homefries, I guess!

Also check out allrecipes.com. I've had a breakfast casserole similar to what janepain recommends, and it's delicious. I'd add some chopped and sauteed green and red peppers, and use a top quality cheddar. And you can substitute shredded ham for the sausage, just folding it in with the peppers and onions you've sauteed. We have this with various breads like coffee cakes, sweet rolls, muffins like blueberry or raisin bran, and serve with fresh fruit like melon and berries. It can all be combined and made ready to bake ahead of time, just to make things easy on the cook. We have people over so we can socialize, not spend the day in the kitchen!

Here's one I'm dying to try.
SKY HIGH BRUNCH BAKE
1 pkg (17.3 oz) frozen puff pastry (2 sheets) thawed 6 eggs 1 cup ricotta Cheese Dash hot pepper sauce 2 pkg (10 oz each) frozen chopped spinach, thawed and well drained. 4 slices cooked bacon, chopped 1.5 cups shredded cheddar cheese 1 cup chopped red peppers
1. preheat oven to 400. Unfolt puff pastry sheets and roll out one sheet to about an 11 inch square and one to about a 12 inch square
2. line the bottom and side of a greased 9 inch springform pan iwth the 12 inch pastry sheet
3. beat eggs in medium bowl with wire whisk. Reserve 1 tbsp egg and set aside. Add ricotta cheese, pepper sauce and spinach to eggs in bowl and mix well.
4. Layer half the bacon, cheese spinachmixture and red pappers in pastry lined pan, repeat layers.
5. place remaining pastry sheet over mixture, fold and tuck pastry edges into pan to enclose filling. Pinch edges to seal
6. brush surface with reserved egg. Pierce pastry seveal times to form vents or slits. Bake 45 to 55 min, or until top is golden brown. Cool 10 min. run small knife around edge of pan before removing.
You can prepare this a day ahead and wrap well. Refrigerate overnight. When ready, unrap and bake at 350 for 50 to 55 min.

this is really easy in an 8x8 pan 4 slices of bread in greased pan topped with 4 eggs mixed with 1C milk,1 C. shredded cheese, 1C bacon, ham or sausage (meat should be already cooked) top with cheese set in refrigerator overnight cook at 350 for 40min let rest 5 minutes and serve...great little omlet casserole
