Britt. It depends on how "from scratch" you want to make it! You can start with the whole chicken, cook it in water seasoned with some onion, celery and carrot, salt and pepper, until the meat falls from teh bones. SAVE the broth. take the meat off the bones. Let the fat in teh broth rise to the surface. skim that fat and remelt it in a sauce pan, add some flour and seasonings, then on medium heat, start adding the liquid, whisking all the while to make a nice smooth sauce.
Make a pie crust for a 1 or 2 crust pie, depending on how you like your pot pie. some people have a bottom and top crust, others just have the top crust.
If you use two crusts, spread the bottom one out in a pie pan or other kind of baking pan (it doesn't have to be round). Now you can assemble the middle. I like to use frozen peas, pearl onions, chopped up bits of carrot, a couple of white potatoes chopped in small chunks and the chicken meat. Layer that in the pie crust, then cover with the sauce..you want enough sauce to make it all moist, but not so much that it's too runny. Top with the top crust, pinch the edges of the crusts together, cut slits in the top, and bake at about 400 for 30 to 40 minutes.

You can make a decent quickie pot pie using leftover chicken meat from a previous dinner, frozen mixed vegetables, canned or package mix gravy and Bisquick for a crust. Make this just a "top" crust pot pie. Be sure to spray the baking pan with Pam or something.
