It's apple time of year at my house.. I'm fast and furiously trying to use up apples.
Here's some of our favorites things to do with apples, besides just eating them raw.
APPLE RECIPES
Old Fasioned Apple Cookies
½ cup butters
1 cup brown sugar
1 egg
¼ cup apple juice or milk
1 cup finely chopped raw apple
1 cup raisins
2 cups flour (I use 1 c whole wheat and 1 c unbleached)
½ teaspoon baking soda
1/4 teaspoon cloves
½ teaspoon cinnamon
Cream butter, sugar and egg until well blended. Add apple juice or milk and baking soda and spices. Fold in flour, then add apples and raisins.
Drop by teaspoonfuls on greased baking sheet. Bake at 350 for 13 minutes.
You also can make bars by spreading the dough out on a rectangular baking sheet.

Chris’s blue ribbon apple pie
(Yes, I really did win a blue ribbon at the county fair for my apple pie when I was 16)
Pie crust for one 9 inch deep dish pie (single crust). Use your favorite crust recipe, or the handy frozen ones from the store!
Filling:
6 cups sliced raw apple, good crisp baking apples (about 6 to 8 apples depending on size)
lemon juice
1 cup turbinado sugar (if using regular white sugar, use ¾ cup)
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup flour
Topping:
1 cup flour
½ cup butter
½ cup brown sugar
Line a pan with unbaked pie crust. Slice apples into a large bowl. Sprinkle with a little lemon juice to keep them from discoloring. Add flour and sugar and spices and mix very well. Turn apple mixture into pie pan. It will be very high, but will bake down. I hate skinny pies! If you’re going to have a pie, have a good one!
Make topping by mixing together the brown sugar and flour. Cut in the butter until mixture resembles a meal and will slightly clump together. Press topping on top of apples and press to edge of crust.
To catch the drippings and prevent overbrowning, I make strips of aluminum foil and wrap around the edge of the pie pan.
Bake at 425 for about 40 minutes. If top gets too brown, cover with foil. Cool. Best served warm. Add a dollop of ice cream and it’s sinful!
This is also called French Apple pie with this topping.
DUTCH APPLE PIE
Crust for a 2 crust pie
Apple filling as above.
1/3 cup cream or half and half or evaporated milk
Line a pie pan with one crust. Prepare filling as above and turn into pie shell. Top with pie crust. Pinch edges together. Cut slits in top crust. Bake at 425 for 40 to 45 min. About 10 minutes before the baking time is done, pour the cream gently in through the slits in top crust. Return to baking.

Apple dumplings
Your favorite rolled sweet biscuit recipe… (Bisquick works in a pinch)
2 cups finely chopped raw apple
½ cup brown sugar
¼ cup butter
glaze: 1 cup powdered sugar, 1 tsp vanilla, water or milk to make a thin glaze
Place the apples, brown sugar and butter in a sauce pan. Heat on medium and then simmer on low a few minutes. You want the mixture well blended and the apples somewhat soft, but not mushy.
Make your favorite biscuit dough. Roll out fairly thin, thinner than you do for biscuits. Cut into squares. In the center of each square, put a tablespoon of the apple mixture. Fold up the corners and pinch to close, so that the biscuit square folds up around the apple mixture.
Bake squares on an ungreased cookie sheet at 425 for 12 to 15 minutes, or until the biscuits are lightly browned.
While apple dumplings are baking, make the glaze. When dumplings are removed from over, cool slightly and drizzle glaze over them while they are still warm. Serve warm.
