Use these too if you need them. I'm trying so hard to remember some stuff for you.
Pasta Salad
1 small bag tricolor spiral pasta
1 bottle creamy caesar salad dressing
1 can diced tomatoes(no spice or other stuff added just plain tomatoes)
1 can of mushroom slices or button mushrooms
1 small jar/can of olives sliced ( I use green, you can use either)
Crumbled feta cheese or shredded parmesan or both
Cook your pasta til al dente (firm yet done). Add your mushrooms, olives, tomatoes and dressing to taste, crumble the cheese on last. You can also use fresh chopped tomatoes and mushrooms but for this I actually prefer canned. Toss all together and chill before serving.
Leslie’s favorite Omelet
2 eggs beaten
1 tablespoon of milk or water
½ cup or so of shredded colby or cheddar
couple slices of ham lunchmeat torn or cut into small pieces
cooking spray or butter
Jar of salsa
Add the milk or water to the beaten eggs and beat again. Spray skillet with cooking spray or melt small amount of butter. Add egg mixture. Let it begin to set, then add cheese and ham to one side. Flip other side over closing the omelet, cook until done and remove to a plate. Cover the omelet with salsa to your taste. Lowfat/Low cholesterol version, use egg substitute and lowfat cheese and cooking spray, lean ham. Make the same way. Still tastes great.
Leslie’s Deviled Eggs
1 dozen eggs hard boiled
½ cup or so real mayo
1 to 2 tablespoons yellow mustard
1 to 2 tablespoons dill pickle juice
Paprika
Salt and pepper to taste
Cut your eggs lengthwise and scoop out yolk into a bowl. Place whites on a plate. Add mustard, mayo, pickle juice, salt and pepper to taste. Mash into egg yolks, then finish off with a hand mixer to get the filling nice and smooth. Once smooth, fill the egg white back up with the filling. I use a teaspoon for this, but you can put in pastry bag and pipe back into the whites for a fancy party. Sprinkle the top of the tray of eggs with Paprika for color and chill before serving.
Mashed Potato Salad
Serve this quick version when you don’t have time for the real thing.
Instant mashed potatoes
Milk
Butter or margerine
Yellow mustard
Real Mayo
Dill pickle juice
Onion powder
Make your mashed potatoes per box directions, maybe a little thicker. Add the other ingredients to taste. Chill before serving if possible. If not eat warm. Sounds gross but is actually a good substitute for the real thing.
