Sacher Torte
7oz unsweetened chocolate 1 cup butter 1 cup sugar 8 eggs separated 1-1/2 cups all purpose flour 1 cup apricot jam, sieved 10 oz unsweetened or semisweet chocolate
Preheat oven to 325F. Grease two 9 inches round cake pans. In double boiler melt 7 oz unsweetened chocolate, stirring until smooth. In a medium bowl beat together butter and sugar until light and fluffy. Beat in egg yolks, one at a time. Beat until light (lemon) colored. Gradually beat melted chocolate into mixture In separte bowl beat egg whites until stiff. Don’t over beat egg whites they should not be dry. Alternately fold egg whites and flour into egg/butter/chocolate mixture. Spoon batter into baking pan. Bake 60min or until toothpick comes out clean when tested. After removing from oven, cool 10-15min in pan. Remove from pan and cool

N*O... what do you do with the apricot jam and the 10 oz of semi sweet chocolate? Are they the topping?

oops yes, you either spread the jam on top of the cake and then top it with melted chocolate, or you cut the cake in half and spread the layer with the jam and then put the cut layers back together and pour the melted chocolate over the top of the cake. Have not made this in a loong time...to much fuss really.

Bet it would be good with seedless Raspberry Jam, too! UMMMMM Chocolate and Raspberries - my weakness.

that was the only time I really enjoyed chocolate. When I was pregnant with Rolf Jr. it was chocolate and fresh Raspberries, this is all I craved. To this day I think it is the only way to eat chocolate! With Valerie it was King Crab - by the pound! ;D

KING CRAB - now you've done it!
When we lived on Nob Hill , we used to take the cable car down to the wharf and pick out live crabs to have them steamed and cracked, then I'd take them home and put them in the wok with a little broth and white wine and have it with lots of crusty sourdough to soak up all that juice - whaaaaa I miss those days sometimes!!
