Potato Salad
5 lb. Potatoes 2/3 cup oil 2/3 cup vinegar 1 cup hot stock 1 finely chopped onion 1 Tbs mustard 2 Tbs chopped chives or green onion 8 oz crumbled crisp cooked bacon
In a large saucepan, boil unpeeled potatoes until tender but firm. Drain peel and slice thinly. Place potato in large bowl. Combine oil, vinegar, stock, onions, salt pepper and mustard. Pour oil mixture over potatoes. Mix in chives/green onion and bacon. Adjust seasonings to taste.

I won't tell my MIL, but your recipe sounds better than hers!
