Greek Potato Salad
6 large red potatoes (about 2.5 pounds worth) 1 cup chopped green pepper 1/2 cup peeled and chopped cucumber 1/2 cup red onion sliced into rings 1/2 cup vinegar or lemon juice or combination (I like balsamic vinegar and lemon juice) 1 teaspoon salt 1/8 teaspoon pepper Oregano 1/4 cup olive oil
Boil potatoes. while potatoes are boiling, slice the red onion and put the rings in a bowl of salt water for awhile (this takes out the "sting" or bite).
When potatoes are cooked, let them cool, then peel and chop into cubes. Chop pepper and cucumber and add to the potatoes. Rinse and drain the onion and add to the mixture. Add seasonings, using oregano to taste. Add the lemon juice mixture and olive oil. These can be adjusted.. more oil and less lemon juice or visa versa... to taste. Toss lightly and chill. You can garnish with sprigs of parsley.

Greek Peasant Salad
3 or 4 Tomatoes, quartered 1 medium cucumber, peeled and sliced or chopped into large chunks 1 green pepper, cored and sliced into strips (you can add other garden vegetables here: raw zucchini or yellow squash for example... be creative!)
4 oz crumbled or chunks of Feta cheese bottled Greek salad dressing (or make your own with balsamic vinegar, olive oil and oregano)
Toss the vegetables in the dressing and toss in the cheese. Refrigerate and serve cold.

My Favorite Greek style Green Beans
(a good potluck dish!)
2 cans of green beans, liquid drained and saved 1 medium onion, sliced 1/2 can (small) tomato paste 1 clove garlic, minced salt and pepper to taste. 2 tablespoons olive oil
Saute onion and garlic in olive oil. Add the tomato paste and dilute with green bean liquid. Stir in salt and pepper and oregano to taste. Cool until liquid is slightly thickened. You may add some water, up to 1 cup, if sauce is too thick. It should be about the consistency of spaghetti sauce.
Some cooks add 1 tablespoon of Worcestershire sauce, but I don't. When sauce is mixed well, add the beans and heat through.

Chris, the little gourmet grocery a town or two away makes a fabulous Greek salad in their deli. They do everything you do, but add ripe olives. Does that sound kosher? (Not to mix cuisines or anything.... )
