Sounds weird, but it's DEEEELICIOUS. Chocolate Zucchini Cake preheat oven to 350. Grease and flour pan. 3/4 Cups soft shortening 3 eggs 2 cups sugar (turbinado sugar works just fine) 1 1/2 tsp baking soda 1 1/2 teaspoon baking powder 2 cups shredded zucchini 1/2 cup milk 2 1/2 cups flour 1/2 cup cocoa 2 teaspooons vanilla Blend the shortening and sugar. Add eggs one at a time, beating thoroughly. Add vanilla. Put soda and baking powder in the milk and add alternately with the flour and cocoa. Mix in zucchini and pour into a 9 x 13 pan or a bundt or springform pan that has been greased and floured. Bake 1 hour at 350. This is good with a glaze or homemade buttercream or cream cheese icing. If you want to forgoe the icing, you can mix 1 teaspoon of cinnamon with 3 tablespoons of sugar and sprinkle this over the cake batter before baking.

This looks great! The zucchini would make the cake very moist, and I bet it would keep for days, if it doesn't get scarfed up first!
