Zucchini Alfredo
1 1/2 pounds of zucchini 1 tsp salt 2-3 cloves of garlic 2 TBS olive oil 1--8 oz pack of cream cheese 3/4 cup half and half 1/2 cup grated parmesan cheese ground pepper--to taste ground nutmeg--to taste
Slice zucchini into strips like noodles--1/4 inch wide. This will make about 8 cups of zucchini "noodles".
Toss the zucchini strips with the salt and place in the colander. Let drain for one hour. Rinse and drain again. Pat dry. (If your zucchini does not have a lot of additional moisture in it, you may want to modify this step.)
In a 12 inch skillet, cook the zucchini in garlic and hot oil for 2-4 minutes or until crisp-tender. Transfer the mixture to a large bowl.
In the skillet, heat the cream cheese and the half and half on low until it melts into a smooth sauce. Stir in 1/2 cup grated Parmesan cheese. Add a sliced fresh red bell pepper.
Stir in the zucchini noodles, heat through. Sprinkle with pepper, nutmeg and the left-over Parmesan cheese.
Makes 8 side-dish servings.

Linda I made the Zucchini Alfredo last night. It turned out very good. I made some lemon chicken breast with mushrooms on the side, we sat outside had a bottle of Pinot Grigio and candle light. AHHH it was great!

You can easily turn this from side dish into a main dish by adding some cut up cooked chicken, or seafood. I put crab in it and wow, it was good!

Great idea!! Big Shrimp, or even scallops.. good thing I already ate. We had cheating pork today because I spend pretty much all day at the barn, the sun did not come out until 3:00pm and then it was still partially cloudy!

Last night I cut up a fresh red pepper into strips and added it to the alfredo sauce to heat through before I put the zucchini into the sauce. Oh my gosh!!! That is going to be a permanent addition to my recipe.
My husband ate the ENTIRE thing--1 15 inch zucchini completely gone! We don't have zucchini to share anymore! Linda
