I loved baked and mashed taters, but I have been preparing red potatos with garlic - and it has been a big hit with the family.
I cut them into chunks and put them in a steamer. I crush several garlic cloves on top of the potatos. Steam until they are nearly cooked. Drain for a minute (I just lift the steamer out of the pot with the whole deal i the sink).
Heat up a big frypan of garlic flavored olive oil. dump the potatoes and garlic in (the garlic was just sitting on top of the potatos). Cover. Chop up some bell peppers, maybe onions if you like them and add to the mix. I fry them up, turning so all sides get browned, but they still have nice structural integrity.
We like this as a side dish to steak or some other dinner.

As a side not, if you like "baked" potatoes but hate the time it takes to cook them: Use a pressure cooker!
They turn out GREAT!

Yum! I made these potatoes tonite with our steak and they were GREAT! This is a "keeper" recipe.

We just love twice baked potatos and I tried something the other night. I "baked" the potatos in the microwave until they were just about done and then scooped out the inside and mashed them with sour cream, cheese, chives and butter. I then stuffed the potatos with the mixture and topped with grated cheese. Then I popped them in the oven for about 10 minutes and they were done. Very easy! Linda H.
