What do you like to do for dinner during hot weather? I'm looking for menu ideas for someone who refuses to get air conditioning!
Any ideal summer meal ideas?

haha, get air conditioning!
In lieu of that, salads... grill some chicken breasts and make a big chef salad with chicken, lots of good kinds of lettuces, tomatoes, zucchini, grated cheese, the works.....
also, cook on a George Foreman grill. They don't heat up the house!

We like to grill up chicken breasts and cut them up (or if we're feeling lazy we buy the pre-cooked, already cut up chicken), put it in pita bread, stuff in some onion, cucumber, feta cheese - whatever and top with ranch dressing. Yum!

Gazpacho is a cold soup. Also tuna salad stuffed tomatos is always a hit. Just slice your tomato almost through in a star pattern and then fill with tuna salad, I suppose chicken salad would be good as well. Also microwaves don't put out much heat, so you could do microwaved rueben sandwiches. Just get good roast beef from the grocery deli and swiss cheese, then put some beef and cheese in the microwave briefly, while that is in, toast some rye bread, add the hot beef and cheese to the rye bread and heap on some sourkraut and spread one slice with a little brown mustard and voila! Also you could serve cold potato salad with this.

LOL! We call that Vitamin I! Sometimes, you just have to get your vitamins. I appreciate all the suggestions! I'm looking for cold things because the idea of eating hot things is kinda icky to me in this weather. My oven is very well insulated, and the range is in the corner between two windows, and never heats up the kitchen. It's not the cooking, it's the eating. You've given me some great ideas! I sure appreciate it; keep 'em coming, if you can. The hot weather isn't over yet!

I dunno, tacos are my favorite dinner in the summer. Browning the meat is the only actual cooking involved (so it's easy), most of the ingredients are cold, and it goes great with a tall glass of cold lemonade! I love the heat, but find I don't have much appetite in the summer. I eat lots of salads (I like to buy the bagged romaine salads, less mess that way), and I'll be really happy once I get some ripe tomatoes from my garden! I eat a lot of watermelon, grapes, things like that, in the summer, too.

I love salads - but I am very choosey about them. I don't have exact recipes, but her are two general ideas of delicious salads that the kids and everyone loves:
-Baby spinach greens -black olives -manderin oranges, from the can is okay -few slices of sweet red onion -sprinkle with Feta cheese
If you are feeling bold, throw in some red bell peppers, maybe some seedless grapes etc.
Our other favorite salad: -use fresh baby mixed greens. The best ones around here is the huge tub of organic baby greens from costco for 3.49 -black olives -variety of veggies such as red bell peppers, finely chopped broccoli, tomatoes - whatever you like -red grapes, apple chunks, manderin oranges, - a nice selection of fruit to sweeten it up -mix with feta cheese.
We often eat those salads without dressings because they are so good with the strong fruit and cheese flavors.

We love what we call "Meat Salad": Get sliced roast beef from the "Deli" section of your grocery or we go to a BBQ place and get some sliced Brisket (no sauce) - cut this in to fork-size pieces. (We figure about 1/4 pound per person)
Greens - I like Romaine - If I can get a head of of it, I cut it cross-wise into 1" ribbons, then rinse and run it thru the salad-spinner. Otherwise, bagged salad works fine LOL
Green Olives - get a hand full - rinse and then chop coarsely
Optional - cucumber, feta cheese, green pepper. Don't go overboard!
Season with Pepper, Oregano, Basil, Garlic
Toss with vinegar and good olive oil. Basalmic vinegar doesn't have that "curl-your-nose" smell, if regular vinegar bothers you.
mmmmmmmmmmm!

Oh yeah, I forgot - a great snack or desert: Frozen Grapes! rinse and freeze Be sure to get the seedless kind! These turn out like tiny little popsicles! My husband also loves frozen blueberries.
