Never ever ever think you can save any part of a spinach bacon salad if you've already dressed it. It just. Doesn't. Work. Now I have to figure out something else for lunch.

LOL! Naw, my southern mama (born and raised right in your back yard, I might add ) taught me that a proper spinach and arugula salad needs bacon, sauteed onion, hopped hard boiled egg, and a few grinds of fresh black pepper. You have the greens in the bowl, then fry the bacon and crumble it, then saute the onion in the bacon fat. If you don't use a piggy amount of bacon, there won't be enough fat to dress the salad, so you need to supplement it with some really fruity olive oil. Then use balsamic vinegar to finish it. Toss and toss, and dine on fresh heaven! But the down side is you have to make what you need for just that meal only. The fats congeal in the refrigerator, and become disgusting. You can't nuke it without heating and cooking the tender leaves. So you either eat it greasy, or flip it in the trash, like I did. Man, I hate waste. Is saying 'I dressed it' a Yankee thing?

Nah, I was just being a smart axxxx. ;D Sounds like a really good salad except for the egg part. I'll have to give it a try one day when I get around to it. Now that is a southern saying (around to it) lol

Hey, Mary Ann, you know what else is REALLY good on that salad? Craisins.... you know those dried cranberries? Of course I'll eat cranberries on ANYTHING.

LOL... I've had those salads... yummy the first time around, but you bet, they wouldn't make good leftovers!

Kel-do you count any points for the craisins? If not, where do you find them???
I have this chicken salad that I make, that I absolutely adore. But it has lots of dried cranberries, and the sugar content in them is unbelievable. I haven't been able to find them unsweetened.
Any advice?

Cally - I don't think the craisens come unsweetend Just use them sparingly, I guess. I made the mistake of buying a huge bag of dried mango slices at Sam's the other day - those things are WAY addictive.
