Today before work ( I work nights) I made mexican chicken and chicken and dumplings, I won't have to cook all weekend!! I boiled a family pack of chicken breast and deboned and shredded the meat. For the mexican chicken I've redone the traditional recipe. I used a can of cream of chicken soup, a can of cream of mushroom soup, two cans of rotel, a can of green chilis chopped, two packages cream cheese, about a pound and a half of velveeta. I mixed all that together in a large bowl and microwaved it and beat it together til it was all mixed and not lumpy unmelted cheese or soup left. I then added the shredded chicken to the cheese and soup mixture, then I crumbled tortilla chips in the bottom of a 13x9 inch cake pan and put the mixture on top. Then I crumbled a few more chips on top of that and baked it at 350 for about 30 to 40 mins. It is creamy and good. Then for the dumplings I took some of the shredded chicken and added it back to the broth where I boiled the chicken, I added salt, ground sage, pepper, minced onion and a little dab of garlic powder and brought all that to a boil (I did have to add some water and you could add a bouillion cube), while it was boiling I made bisquick dumplings. Unfortunately neither of these recipes is especially south beach friendly. So you might not want to do them at all Mary Ann. I've been cheating pretty badly on south beach lately. OH and if anyone else doesn't know how to make bisquick dumplings they are on the box, if you have off brand bisquick it is two cups mix, to 2/3 cup milk stir together and drop by teaspoonfuls into the boiling broth then cover the pot and simmer about 15 more minutes. Alyssa LOVES these.

You're not alone, Lesfire. I've had much success in feeling great on SB, but I just got so sick of the meat! I'm not a big meat eater anyway, so I've changed my tactics. Everything's sort of Phase 2 or 2.5, but I have mouse sized meals. Smaller portions never hurt anyone, and I still stick with the whole wheat thing. I've always preferred whole wheat breads, brown rice, etc, but I just can't get into all that meat. And I want to have fruit! Personally, I do better with it if it's later in the day. I gained back everything I lost over the holidays, so it's back in the trenches for me! Your recipes sound deeeeelicious, and for a special weekend treat, I think I might try them! Just in mouse portions, that's all.
